AUDREY EATS – COCONUT PROTEIN PUNCH (PERFECT POST-WORKOUT TREAT)
Possible ingredients for this quick and healthy breakky jar are endless and are only limited by your imagination. Try soaking your oats for a Bircher-like texture or add a handful of cocoa nibs and granola for extra crunch.
Quick & Healthy Breakky Jar:
Ingredients:
1 red apple, diced
2 dates, chopped (optional)
2 teaspoons cinnamon
1 ripe banana, sliced finely
1/2 cup oats
1 handful fresh blueberries
1 handful pomegranate seeds (optional)
1/2 cup Greek yoghurt (optional)
1 tablespoon honey (optional)
1/4 cup flaked almonds, toasted
1 tablespoon pistachios, crushed
Method:
Combine apple and one teaspoon of cinnamon in a bowl.
Sprinkle some oats in the bottom of a mason jar.
Add a layer of apple.
Repeat with the rest of the ingredients, one layer at a time.
Top with nuts.
Refrigerate overnight.
