How would you describe your eating philosophy?
I like to eat a majority plantbased diet, mostly organic and preferably local. I don’t promote any particular diets as I believe what may work for me may not necessarily be right for you. What I do like to emphasise with Hippie Lane is to eat more fresh food, less packaged and refined foods, and to be easy on yourself. In a society where looks, outer beauty and diets of deprivation have been the focus, I’d like to take a step back and instead, view food as nourishment – to eat in abundance and to enjoy food without any guilt or restrictions.
What are your favourite time saving meals? Do you make meal preps beforehand?
Meal prepping is a great way to save time. I often cut veggies and get my ingredients together for my dinner or the school lunch boxes so that I’m ready to go.
If I’m short on time, I usually make a quick pesto for my Green Goddess Bowls or make my classic Tomato Sauce for a gluten free pasta. Smoothie bowls are a great quick breakfast option as are many of the recipes from my cookbook. Not too time consuming, healthy and mostly easy to prepare.
