#4 – Gigis, Newtown
The only pizza place on the list with an APVN (Associazione Verace Pizza Napoletana) accreditation; that basically means a bunch of Italians came out, tried the pizza and declared it authentic AF. This is no easy feat. Effectively, Gigi’s demonstrated quality and authenticity in every stage of pizza production from dough prep to topping application and base taste (must be puffed and chewy).
In 2015, Gigi’s turned vegan, and proved to the cheese and meat lovin’ naysayers Sydney wide, that vegan pizza is most definitely a thing. With ingenious cheese substitutes (cashew cream and walnuts), you really don’t miss the dairy. Anyway let’s face it, it really is all about that base.
