Too-Good-To-Be-True: No-Bake Brownies

Full of delightful ingredients that are kind to your blood sugar levels, these no-bake brownies are what you should be reaching for at 3pm (or any hour for that matter!)

Full of healthy fats and protein, these delicious morsels come together perfectly without the using the oven, flour, sugar, or butter. One small piece satisfies afternoon chocolate cravings and they make the perfect indulgent after-dinner treat as well.

(p.s It may look like a lot of ingredients, but this is super-easy… trust us!)

Brownies:

1 cup pecans, almonds or cashews (or a combination of each)
1/4 cup raw cacao powder
1/4 cup shredded coconut (optional)
1 heaped cup soft dates, pitted
2 tablespoons maple syrup (or agave or honey)
1 tablespoon coconut oil, melted (or cacao butter)
1/2 teaspoon vanilla extract

Chocolate ganache:

1/4 cup raw cacao powder
1/8 cup coconut oil, melted
1/8 cup maple syrup (or agave syrup)
1/4 teaspoon pure vanilla extract

1 tablespoon cacao nibs for garnish (optional)

Method:

1. Line a slice tin with baking paper.
2. Place nuts into a food processor.
3. Process until broken up roughly.
4. Add cacao powder and shredded coconut (if using).
5. Process again for a few seconds until combined.
6. Add dates and process until combined.
7. Add coconut butter, maple syrup and vanilla and process until combined (the texture should be sticky enough when squeezed together).
8. Press into tray.

Refrigerate for 2 hours to set (or keep in the freezer)

Ganache Method:

Whisk cacao powder, coconut oil, syrup and vanilla until smooth.
Spread over firm brownie mixture.
Sprinkle over cacao nibs
Refrigerate for an hour, until set.

      You can probably use the ganache on other baked items – maybe even a biscuit?!
