Too-Good-To-Be-True: No-Bake Brownies

Full of delightful ingredients that are kind to your blood sugar levels, these no-bake brownies are what you should be reaching for at 3pm (or any hour for that matter!)

Full of healthy fats and protein, these deliciousΒ morselsΒ come together perfectly without the using the oven, flour, sugar, or butter. One small piece satisfies afternoon chocolate cravings and they make the perfect indulgent after-dinner treat as well.

(p.s It may look like a lot of ingredients, but this is super-easy… trust us!)

Brownies:

1 cupΒ pecans, almonds or cashews (or a combination of each)
1/4 cupΒ raw cacao powder
1/4 cupΒ shredded coconut (optional)
1 heaped cupΒ softΒ dates, pitted
2 tablespoonsΒ maple syrup (or agave or honey)
1 tablespoonΒ coconut oil, melted (or cacao butter)
1/2 teaspoonΒ vanilla extract

Chocolate ganache:

1/4 cupΒ raw cacao powder
1/8 cupΒ coconut oil, melted
1/8 cupΒ maple syrup (or agave syrup)
1/4 teaspoonΒ pure vanilla extract

1 tablespoonΒ cacao nibs for garnish (optional)

Method:

1. LineΒ a slice tin with baking paper.
2. PlaceΒ nuts into a food processor.
3. ProcessΒ until broken up roughly.
4. AddΒ cacao powder and shredded coconut (if using).
5. ProcessΒ again for a few seconds until combined.
6. AddΒ dates and process until combined.
7. AddΒ coconut butter, maple syrup and vanilla and process until combined (theΒ texture should be sticky enough when squeezed together).
8. PressΒ into tray.

RefrigerateΒ for 2 hours to set (or keep in the freezer)

Ganache Method:

WhiskΒ cacao powder, coconut oil, syrup and vanilla until smooth.
SpreadΒ over firm brownie mixture.
SprinkleΒ over cacao nibs
RefrigerateΒ for an hour, until set.

      You can probably use the ganache on other baked items – maybe even a biscuit?!
