Something magical happened in my Kitchen this evening… and do you want to know the best part about it? Each bite is a guilt free pleasure.
I’ve been getting my hands rather dirty with the whole ‘clean eating’ phenomenon of late and am constantly mind-boggled at how delicious deserts can taste without any added sugar. Who would have thought?
With that in mind… Let me introduce this delectable Raw Chocolate & Nut Tart.
The little angel on your shoulder can thank me later.
What will you need?
For the Base:
– ½ cup Medjool dates
– 1 Cup of mixed nuts of choice (I used cashews, brazil and almonds)
– 1/3 cup melted coconut oil
– ¼ cup shredded coconut
For the chocolate delicious filling:
– 8 Medjool dates
– 2.5 Tbsp. 100 % Natural peanut butter
– 3 Tbsp. coconut milk
– 1 Tbsp. Vanilla bean paste of Vanilla extract
– 4 Tbsp. Cacao powder (different to cocoa powder)
– ¼ Cup melted coconut oil
– 4 Tbsp. boiling water
All ingredients are available at my favorite store Thomas Dux.
What to do?
For the base:
Mix all ingredients into a blender until the mixture is finely chopped.
Once sticky and crumbly… mould into a round tray and place it in the fridge whilst you prepare the chocolate filling.
Chocolate filling:
Mix all ingredients together in a blender until soft and smooth (resembles melted dark chocolate)
Once satisfied with the texture, spoon the chocolate filling into the base, add desired toppings (coconut, goji berries, cacao nibs, whatever floats your boat) and place in the fridge to set for 1 – 2 hours.
Serve & Enjoy or keep for nibbles throughout the week (in moderation of course)
