There is nothing better than delicious warm bowl of porridge on a winters morning! Especially in Melbourne…
Last week I woke up craving exactly that… so what happened when I walked into my Kitchen and had no oats? I got creative. Introducing my Spiced Cinnamon Quinoa Porridge!
This excites me a lot! Not only is Quinoa one of the most protein-rich foods we can eat, but it also contains twice as much fibre
as other grains, making is an amazing Superfood
(not to mention its Gluten free – win!)
What you will need**
1 Cup of black or white cooked quinoa (make sure you soak your quinoa for several hours before cooking)
1/2 Cup Almond Milk (can use normal, soy or coconut – up to you!)
1 Teaspoon Cinnamon
1 Teaspoon Vanilla Essence or Vanilla bean paste
A handfull of Nuts of your choice (I use brazil and walnuts)
** All ingredients can be found at my favorite place to shop Thomas Dux! They have a wide range if quinoa from some great brands I trust.
Also worth noting at Thomas Dux this month, they have intoduced Red tipped Eco Banana’s. Grown on 5 family owned farms in tropical North Qld, Eco Bananas are about farming with nature. Dipped in food grade wax purely to identify them as Eco Bananas, they are sweeter, creamier and have a longer life. Sustainably farmed. No fertilisers or chemicals used. Ba, na, na, na, na, na, na, na, na, na, Make your body sing!
What to do
Place your cooked quinoa into a saucepan with milk and begin to heat on low (remember quinoa is already cooked)
Add your cinnamon and vanilla essence and stir well
Add 1/4 of your banana (chopped) and continue to stir
Add 1/2 of the nuts and stir some more….
When quite a lot of the milk has dissolved then your porridge should be ready!
Place into a bowl and top with the remaining Banana and Nuts and a dollop of Yoghurt!
