Audrey Eats – Super Green Breakfast Bowl

I’m a huge breakfast fanatic – always have been. However in 2014 things have really changed on the breakfast front, and long gone are the rice bubbles and vegemite toast combos (not that I don’t have that occasionally!) To me, breakfast needs to be the whole kit and caboodle – I want healthy, filling, tasty, different, quick to prepare.. did I say healthy? No small feat! If you’re already a fan of a daily super green health drink, you may be really interested to give this green breakfast bowl “recipe” a try. In reality, it’s less of a recipe and more of an educated combining of goodness into a bowl, but that works for me.

Ingredients:

  • 1 scoop brown rice protein
  • 2 handfuls of kale
  • ½ banana
  • ½ cup Meko 100% Pure Coconut Water
  • cinnamon
  • slippery elm

Method:

Place all ingredients into a high power blender, and blend for 30 seconds. Pour into a bowl and serve with raspberries, seeds and almond meal.

This recipe came courtesy of nutritionist and personal trainer Nik Toth who recommends Meko 100% Pure Coconut Water for superior taste. I loved it, let us know what you think in the comments.

What does kale taste like? Is it bitter?

Just not quite sure about the Kale…and don’t think I’ve ever even seen it before in fruit and veg shops

I saw this somewhere else just a day or two ago… my reservation is, it requires a lot of ingredients not in my pantry (4 of the 6).
